Granola Clusters



1 1/4 cup of oats
1/2 cup unsweetened coconut
1/2 cup sliced almonds
1/2 cup of dried blueberries (if desired)
1 tablespoon of coconut sugar
1/4 cup of coconut oil
1/3 cup of maple syrup
1 teaspoon of vanilla
2 egg whites beaten

Combine oats, coconut, almonds in a large bowl.  In a small saucepan combine, maple syrup, coconut oil, coconut sugar and vanilla until bubbly.  Pour over oat mixture to combine.  Add beaten egg whites.  Spread mixture onto a parchment lined pan and bake for 15-20 minutes.  Be careful as this will burn quickly if you don’t pay attention.  Rotate pan if needed.  Let cool and break into clusters.
