Salmon with Blueberry Sauce and Roasted Vegetables
Sheet Pan Meal

2- 4 ounce Salmon filets
1 cup of fresh blueberries
1/4 cup water
1/4 cup of maple syrup
8 ounces asparagus
2 small sweet potatoes (Par cooked)
1/3 cup olive oil divided
garlic powder
oregano, basil, cinnamon (or seasonings desired)

Toss asparagus with small amount of olive oil and garlic powder and place on a sheet pan.  In mixing bowl place cubed par cooked sweet potatoes.  Coat with olive oil and seasonings desired.  Add to sheet pan. Place salmon filets on pan.  Bake at 400 degrees until salmon is flakes easily.

In a saucepan add blueberries, water, and maple syrup.  Bring to a boil.  Let simmer for sauce to reduce and blueberries to soften.  Top salmon with sauce.  Enjoy!
